My New Diet Restrictions… and the deliciousness that’s come from them!

Have I ever mentioned that I have food issues?

I mean I LOVE food! The more flavor the better!

I love food too much!

…but my digestive system is pickier than a three year old!

If you’ve followed me long, you know I have had Type 1 Diabetes for almost 25 years, and I’ve had Celiac Disease for around 20 years, and that cuts out about 70% of anything the regular American diet includes.

Well this pregnancy has made it much, much worse!

In addition to my typical no gluten diet, I am now on a no dairy, no brown rice, no quinoa, and no caffeine diet.

(I’m still weeping about the caffeine part)

So….what the heck do I eat?

I decided to try to eat more Alkaline, in hopes of healing my body…and honestly, I hoped a bi-product would be to not gain 60 lbs during this pregnancy.

As a Registered Dietitian, this is what I came up with for the specifics.

Stuff I can’t eat due to my digestive system:

No quinoa, gluten, brown rice, oats, caffeine, and very, very LOW dairy.

Healthy stuff I added:

No sugar, no butter, chips, nothing processed, (if an ingredient isn’t something I would cook with in my kitchen, then nope).

Very low meat.

Low meat mostly because I’m one of those weird people who has never liked meat and would pick all the hamburger out of my casseroles as a child (Except bacon. I mean who doesn’t like bacon). Using vegetable protein instead of animal protein is also a healthy choice and encourages me to eat more beans, legumes, tofu, nuts, seeds, broccoli, spinach etc.

Side note: this is the beef (pun intended) that I have with the Paleo diet. The site has two pictures of bacon….because they think it’s that good for you, but won’t let you eat beans! Seriously….how do they decide on this stuff? Beans and legumes are really, really good for you people! …and I’m truly sad to say, that bacon is not.

…sorry I digressed,

What else? Eating vegetables daily without cooking them, or eating them less cooked to save more of the vitamins.

So, are you asking what on earth I could be eating?

Healthy Foods

The answer is yummy stuff!

I have eaten so many really good recipes over the past month of eating like this!

I made a Pinterest board titled “Healthy Eating” that follows my diet guidelines to some extent.

You might see some noodles, or grains, but I just leave them out. If it has sugar as an ingredient, I replace it with honey or agave….you get the idea. (see side not at the bottom of page)

Here’s a run-down of a few I’ve tried and loved.

1. Banana-Chocolate Shake

2. Chia Breakfast Porridge * I eat this every morning. I drizzle some agave syrup across the top, and raisins (crucial in my opinion) and sometimes switch the fruit around. I was putting the toppings on plain yogurt instead of chia seeds, until the dairy started bothering me, but the chia seeds are actually pretty good.

3. Peanut Butter-Chocolate Chia Seed Pudding  * I added 2 tsp. agave or honey to each cup

4. Thia-Mango Cabbage Wraps  * OMGosh. These were so good. I ate like 7 of them at one sitting (no judging).

5. White Chicken Chili

6.  Sugar Snap Pea and Carrot Soba Noodles *I replaced the soba noodles with rice noodles, but they still made me sick. Tasted great though! My daughter and husband finished it off for me. Next time I’ll make it without any noodles.

7. Tofu Vindaloo * This was also really good! My 4 yr old and I gave it two thumbs up! If you like Indian food, you’ll love it!

8.  Cowboy Caviar

 9. Quick Roasted Brussels Sprouts with Coconut Ginger Sauce *Another really good one! All my kids tried it and liked it! Who woulda thought?

This is going to become a weekly post (I hope). I’ll let you know what I’ve tried and which recipes were good.

*Side note: as a health professional I feel that low-fat dairy, whole grains, and lean meats (all in moderation) are part of a healthy diet. I just don’t include them personally for stomach reasons, or because I don’t like the taste…just reiterating so I don’t get hate mail.
